Costa Rican Ceviche
During our recent Costa Rica Virtual Real Estate Tour, real estate partner Becky Clower and her Mom, Ana Vargus shared their favourite all time recipe for a traditional Ceviche. We’re delighted to share this with you and hope you taste the Pura Vida in every morsel!
INGREDIENTS
- 1 lb firm white fish, such as halibut, sea bass or mahi mahi, cut into small bite-sized pieces
- 2 small red onion chopped
- 1 garlic clove minced
- 5 sprigs cilantro (or coriander leaf) finely chopped
- 1 small hot pepper seeded and finely minced
- 3/4 cup freshly squeezed lime juice
- Salt & pepper to taste
INSTRUCTIONS: Combine all ingredients EXCEPT salt and pepper. Cover and refrigerate at least 4 hours or overnight. Add salt and pepper to taste before serving. Ceviche can be served with tortilla chips (homemade or store bought corn tortillas) or in soft corn tortilla as a soft taco.
